NewlyMom Chef

The NewlyMom Chef

Catchy, isn't it?

I know what y'all are thinking....she's back?!? What???  I thought this was a phase, a one & done thing, a done deal,...and "she's writing this blog because she has all the time in the world to do as she pleases!!!"

Well, you're right.

I'm laying quietly (shhh, the baby's sleeping!) on the dining room floor, finishing up the grocery list, and deciding to put my to-do list down and pick up on this blog again. Here's a picture in case you need proof.

SO, VWALAHH, I'm back!

I'm guessing you'd like to know how far I've come since the creation of this blog......... right? You ARE reading it, right? I've become quite the house chef. You'd be proud, really. If you'd ask my husband if I'm a good cook, he'd say "She's amazing, I love her cooking, she's the best cook in the world, really" (He's trained)

And, well, you know? He's wrong. I've gotten really good at scouring recipes on the internet, trying lots of new things, and hitting the jackpot a few times. But still, more often than not, we just eat because we're so freaken hungry, not because it tastes all that great. We eat fast and in a hurry, few words spoken in between bites, and then laughter ensues shortly thereafter. I'm not quite sure who we've become since Luke has been born. But I like it, and I love our sweet family.

A few things you want to know/tips about being a newlymom chef...

1.) You provide multiple meals a day....and they ALWAYS taste great to your parasite. (That's for a baby, in case you didn't catch that)

2.) You become a master at cooking with one hand.

3.) You almost ALWAYS burn whatever your cooking if you do not put on a kitchen timer.

4.) Don't leave the eggs alone while they are cooking in the frying pan and walk to do something else. You WILL forget about your breakfast and than curse at the burnt eggs when the fire alarm goes off.

5.) You need to write recipes/meal plans down, or you will forget what you planned and then you will spend another hour thinking about what to make that week.

And so, our menu this week:

Greek Tabouli Salad (Compliments of Marta Bailey's recipe)
Sante Fe Chicken (Skinnytaste.com)
Fish Tacos with Fiesta Lime Rice (Skinnytaste.com)
Roasted Pork Tenderloin with Crusted Lime Brussel Sprouts (punchfork, baby)
Spaghetti with Turkey Meatballs in a Spicy Tomato Sauce (Ellie Krieger)
Greek Salad (I'm so great I don't even NEED a recipe for this one, woo hoo!!)

Pretty awesome right? Thanks. I'd write more, but I hear the baby crying, wanting a meal himself.

Until next year,

Rosie
